What am I going to cook tonight?

1 medium tomato finely diced
1/2 spring onions, finely diced
small handful chopped fresh coriander
1 tbsp lime juice
pinch chilli flakes
pinch salt to taste
1 large, ripe avocado diced

Makes about 325 ml

1. In a medium bowl, toss the tomato with the sping onions, coriander, lime juice, chilli flakes and salt. Leave to sit for about 5 mins

2. Add the avocado and gently mash it into the tomato mixture with a fork. Serve immediately.
