Chicken Prosciutto Wraps
2 tbsps tomato ketchup
1 tbsp Worcestershire sauce
4 skinless chicken fillets
4 slices mature cheddar
8 slices prosciutto
Serves 4
1. Preheat the oven to 180°C Fan/200°C. Mix the ketchup and Worcestershire sauce and put aside.
2. Flatten the chicken fillets a little by bashing with rolling pin.
3. Put a slice of cheese on each fillet and roll up to enclose the cheese. Lay 2 slices of prosciutto side by side and wrap them round one fillet to enclose it. Repeat with the other fillets.
4. Put the chicken wraps on a baking sheet and brush liberally with the sauce. Bake for 25 minutes (or until cooked). Baste regularly.
5. You could also do this with regular bacon to wrap the chicken. Just stretch it with the back of a knife before wrapping round the fillets.
