Salmon Fillet with a Pesto Crust

1 salmon fillet, about ¾"/2cm thick, skinned
½ tablespoon grated Pecorino cheese
1 tablespoon fresh pesto sauce
squeeze lemon juice
1 tablespoon fresh breadcrumbs

Serves 1

1. Preheat the oven to 230° C/Gas Mark 8. Cover a baking tray with oiled foil.

2. Put your fillet on the baking tray and squeeze a little lemon juice over it.

3. Mix a third of the breadcrumbs with the pesto to make a paste and spread it over the salmon.

4. Mix half the cheese with the rest of the breadcrumbs and scatter it over the pesto.

5. Sprinkle the remaining cheese over the top.

6. Cook the salmon in the oven for 10 - 15 mins.
