Wholefood Mincemeat Slices
150g Vegetable margarine
75g Soft brown sugar
225 Wholewheat flour
110g Porridge oats
225g Mincemeat
Makes 12 - 18
1. Preheat the oven to 400°F/200°C/180°fan/Gas mark 6.
2. Melt the margarine together with the brown sugar either in a pan gently or in the microwave. Mix the margarine and sugar until there are no lumps of margarine or unmelted sugar.
3. Mix the flour and oats together.
3. Remove the pan from the hob, or the bowl from the microwave. Mix in the flour/oat mixture stirring well until combined.
4. When blended, press half the mixture into a lined or well greased shallow pan measuring 28 x 18 cm. It may seem thin, but it'll work. Press well into the tin to even out and cover the base. The better you press, the less crumbly the end product.
5. Cover the based with the mincemeat.
6. Put the remaining flour/oat mixture on top of the mincemeat, evening out and pressing down with the back of your hand again.
7. Bake in the middle of the oven for 20 minutes until the top is just starting to turn brown.
8. Remove from the oven and mark into slices, either 12 or 18 depending on how big you want them. Then leave in the tin to cool completely.
9. Once cooled, lift from the pan with a palette knife and place in an airtight tin.
