Lime & Sea Salt Cookies
1 tbsp lime zest (approx 1-2 medium limes)
½ tsp baking soda
¼ tsp salt
170g butter or margarine
150g granulated sugar
1 large egg yolk
2 tbsp lime juice (approx 1-2 medium limes)
½ - 1 tsp seat salt to sprinkle on top of the cookies
Makes about 30 cookies
1. Heat oven to Fan 165°C/175°C.
2. Mix together flour, lime zest baking soda and salt.
3. Beat butter or margarine and sugar together until light and fluffy.
4. Mix in egg yolk and lime juice.
5. Mix in flour mixture until just combined.
6. Drop by tablespoons onto baking trays leaving about 3" between cookies. Using a damp spoon or fork, flatten the cookies to about ½ thick.
7. Sprinkle a little of the sea salt on each cookie.
8. Bake for 15-20 mins until the edges of the cookies are slightly browned. Longer give a crisper cookie, shorter and they will be soft in the middle.
