What am I going to cook tonight?

Glossy Chocolate Cake

275g self raising flour
½ level tsp salt
3 level tbsps cocoa
175g caster sugar
1 level tsp bicarbonate of soda
300ml milk
150ml corn oil
3 level tbsps golden syrup
½ tsp vanilla essence
chocolate icing

Makes 2 x 8" cakes

 

1. Heat the oven to Fan 160°C/180°C. Grease and line the bases of 2 x 8" sandwich tins.

2. Sift the flour, salt, cocoa & sugar into a bowl & make a well in the centre.

3. Dissolve the bicarbonate of soda in 1 tbsp of the milk & then pour into the flour with the rest of the milk, oil, syrup & vanilla essence. Beat well to make a smooth batter.

4. Pour into the tines and bake in the oven for about 40 mins, or until the cake springs back when lightly pressed with a fingertip.

5. Turn out onto a wire rack and leave to cool.

6. Sandwich together with chocolate icing.
