Carrot Cake (with a food processor)
3 medium carrots, peeled & grated
1 cup sugar
½ cup vegetable oil
2 eggs
1 teaspoon baking powder
1 teaspoon baking soda
1 teaspoon cinnamon
1 teaspoon salt
¼
teaspoon mace
1½ cups plain flour
1 can (240g) crushed pineapple
Makes 1 9" square cake
1. Preheat oven to 190° C.
2. Put knife blade in food processor.
3. Put grated carrot, sugar, oil, egges, baking powder & soda, cinammon, salt & mace in bowl. Process to mix for about 30 secs.
4. Add flour and process for about 15 secs.
5. Add pineapple and pulse for about 2 or 3 secs to mix.
6. Turn into a greased and floured 9" square baking pan. Bake until the cake springs back when lightly touched in centre. About 30 - 35 mins. Cool and remove carefully from pan.
7. Ice with cream cheese icing if desired
