Hand mixed Banana Bread
3-4 over ripe bananas
75g melted margarine or butter
1 cup sugar (you can get away with ¾ cup)
1 egg, beaten
1 tsp vanilla extract
1 tsp bicarbonate of soda
Pinch of salt
1 ½
cups plain flour
Makes one loaf
This is a really easy recipe which doesn't need an electric mixer of any type.
1. Preheat oven to 175°C/Gas Mark 4.
2. Mash the bananas with a fork.
3. With a wooden or silicone spoon mix the melted margarine into the mashed banana in a large mixing bowl.
4. Mix in the sugar, beaten egg and vanilla extract.
5. Sprinkle the baking soda & salt over the mixture and mix in.
6. Finally, add the flour and mix to a sticky batter.
7. Pour/scrape the mixture into a greased 4"x8" loaf pan.
8. Bake for 60 mins.
9. Cool on a rack, then remove from the pan.
