Banana Bread (with a food processor)
4oz butter or margarine (in about 6 pieces)
1½ cups plain flour
¾ cup sugar
2 eggs
¼ cup milk
2 teaspoons lemon juice or vinegar
1 teaspoon baking soda
½ teaspoon salt
½ cup walnuts or pecans (optional)
1. Preheat oven to 180° C.
2. Put knife blade in bowl and add bananas and butter or margarine. Process untill finely chopped, about 20 secs.
3. Add remaining ingredients, except the nuts, and process for about 10 secs. Don't overprocess, it'll make the bread dry and crumbly.
4. Scrape down the sides of the bowl and add the nuts if desired. Process for about 2-3 more seconds.
5. Turn into a greased 9x5 inch loaf pan. Bake until bread springs back when touched lightly in centre. About 55 - 60 mins. Cool before removing from the pan.
