Turkey Trash
1 onion
1 stick celery
50g margarine or butter
2 rashers bacon
75g mushrooms
350g leftover cooked turkey
25g plain flour
350ml stock
1tbsp brandy
Optional: any other leftovers such as bacon rolls, sausage stuffing, regular stuffing, cranberry sauce, veg. Approx 100ml cream or creme fraiche.
1. In a large saucepan/casserole dish sweat the onions and celery for a few minutes until soft in margarine.
2. Turn heat up slightly and add mushrooms and bacon.
3. Once the bacon is just cooked through, turn heat down and add diced leftover turkey for a couple more minutes.
4. Add the flour and cook for a minute.
5. Gradually add the stock and add till thickened.
6. Toss in the optional extras and simmer together for about 20 mins.
7. To finish add a good slug of brandy and stir in cream or creme fraiche if using then stir over a gentle heat until warmed through.
