Sticky Salmon Stir Fry
4 skinless salmon fillets
3 tbsp oyster sauce
2 tbsp teriyaki sauce
1 tbsp honey
1 tbsp oil (a mix of olive & sesame works well)
1 tbs[ grated fresh root ginger
1 garlic clove finely sliced
Pinch dried chilli flakes
500g mixed veg, mostly green (try a mix of broccoli spears, mange tout/sugar snaps, pak choi, green beans, mini corn etc.)
Serves 4
1. Heat oven to 200°C/180°C Fan/ Gas mark 6. Put the salmon on a baking tray.
2. Mix together the oyster sauce, teriyaki sauce and honey then brush a little over the fish.
3. Roast the fish for 12-15 mins until just cooked and glazed.
4. Meanwhile, heat the oil in a wok and fry the ginger, garlic and chilli for 1 min. Then stir fry the larger, harder veg for 3 mins. Finally add leafy veg and stir fry for another 1-2 mins. Stir in the rest of the stick sauce off the heat to warm through.
5. Serve with the roasted fish and rice or noodles.
