Spicy chicken stir fry
2 tbsps oil
2 garlic cloves, peeled & diced
1 onion, peeled and roughly diced
1 tsp dried chilli flakes
100g unsalted cashew nuts, roughly chopped
500g chicken breast, diced
250g sprouting broccoli
2 tbsps soy sauce
1 tbsp fish sauce
1 tsp sugar
Serves 4
1. Put rice on to steam
2. Heat a wok until hot
3. Add oil and onion and broccoli stalks and cook for a minute. Add garlic and chilli flakes and cook for a further 30 secs stirring
4. Add cashew nuts and chicken and stirfry until chicken is just cooked, about 3 mins
5. Mix soy sauce, fish sauce and sugar with 2 tbsps water and add. Cook for one more minute
6. Serve with steamed rice
