Speedy Spaghetti Bake
225g quick cook spaghetti
250g carton mascarpone
1 tsp dijon mustard
175g mature Cheddar, grated
6 sun-dried tomatoes, finely chopped
2 tbsps snipped fresh chives
salt & pepper
Serves 2
1. Pre-heat the oven to 220°C/425° F/Gas 7.
2. Cook the spaghetti, according to the packet instructions. Drain well and return to the pan.
3. Add the mascarpone and mustard. Stir until the mascarpon melts around the pasta.
4. Stir in the Cheddar, sun-dried tomatoes, chives and seasoning. Turn into an ovenproof dish and bake for 15 minutes until bubbling and golden brown.
