What am I going to cook tonight?

Savoury Nut Rice


125g Brown rice
125g Smoked bacon, chopped
1 medium onion, chopped
175ml Chicken or vegetable stock
50g Raisins
25g Walnuts, chopped
Salt & pepper to season
40g Cheese

Serves 2 - 3

1. Cook rice in boiling water, but for only 20mins, strain.

2. While the rice is boiling, gently fry the bacon and onion for 7- 8 mins.

3. Add rice, stock, raisins, nuts and seasoning to the bacon and onion.

4. Stir well, bring to the boil, then turn down the heat and simmer for 10 mins until the rice is tender.

5. Stir in the cheese just before serving.
