Quick Paella
2 tbsps oil
1 onion, sliced
1 red pepper, cored, seeded and sliced
1 garlic clove, crushed
200g long grain rice
175g chorizo, cut into cubes or sliced thickly
900ml chicken or vegetable stock
½
tsp each paprika & ground turmeric
100g large prawns, thawed if frozen
100g frozen peas
salt & pepper to season
Serves 4
1. Heat the oil in a large frying pan and cook the onion gently for 3-4 mins.
2. Add the red pepper, garlic and rice and stir-fry for another few minutes.
3. Add the chorizo, paprika and turmeric and mix well together.
4. Add the stock, bring to the boil and then simmer for about 15 minutes.
5. Stir in the prawns and frozen peas and cook for another 3-4 minutes until the rice and vegetables are tender.
6. Let stand for 3-4 mins, season to taste and serve.
