Nut Roast
1 medium onion
2-3 mushrooms chopped (optional)
25g butter or margarine
225g mixed chopped nuts
100g wholemeal bread
3 to 4 tbsps vegetable stock or water
2tsp yeast extract
1tsp mixed herbs
1tbsp tomato puree
50g grated cheese
2 tomatoes, sliced
A few leaves of baby spinach, optional
Serves 4 - 6
1. Chop the onion finely (and chopped mushrooms if using) and soften gently in butter or margarine until very soft.
2. Make breadcrumbs from the bread (either grate, or chop with a liquidizer). Chop or grind the nuts finely and mix with the bread.
3. Heat the stock and yeast extract together to boiling point (easily done in a microwave).
4. Comine breadcrumbs, nuts, softened onion, tomato puree and herbs together and mix well. (If you have a food processor, omit step 2 and mix everything together in the food processor).
5. Pack half the mixture into a greased 1lb loaf tin or baking dish. Layer on the sliced tomatoes (and spinach leaves if using) and grated cheese. Then top with the remaining mixture.
6. Bake at 180°C for about 30 mins. Cut into thick slices.
