Nut Roast
1 medium onion
25g butter or margarine
225g mixed chopped nuts
100g wholemeal bread
300ml vegetable stock or water
2tsp yeast extract
1tsp mixed herbs
1tbsp tomato puree
50g grated cheese
Serves 4 - 6
1. Chop the onion finely and soften gently in butter or margarine until very soft.
2. Make breadcrumbs from the bread (either grate, or chop with a liquidizer). Chop or grind the nuts finely and mix with the bread.
3. Heat the stock and yeast extract together to boiling point (easily done in a microwave).
4. Comine breadcrumbs, nuts, softened onion, tomato puree, grated cheese, and herbs together and mix well. (If you have a food processor, omit step 2 and mix everything together in the food processor).
5. Pack into a greased 1lb loaf tin or baking dish.
6. Bake at 180°C for about 30 mins. Cut into thick slices.
