Leek, Bacon & Pea Pasta Bake
2 leeks, sliced into rings
1 tbsp olive oil
2 handfuls frozen peas
400g penne
200g soft cheese
85g cheddar cheese, grated
1 tbsp English mustard (Cumberland Mustard works really well)
Small bunch basil, chopped
1. Put the pasta on to boil and turn the grill to high.
2. Fry the bacon and leek together in the oil for 10 minutes on medium heat until the bacon is golden and the leeks soft.
3. Tip in the peas and heat through.
4. Keep 150ml of the pasta cooking water before you drain it.
5. Add the cooking water, soft cheese, half the grated cheddar & the mustard to the bacon and vegetables and stir until a creamy sauce forms.
6. Stir in the pasta and most of the basil. Sprinkle the remaining cheddar on top.
7. Grill for 2-3 minutes until the cheese melts and browns, scatter with the remining basil and serve.
