Easy Chicken & Bacon Pie
1 onion, chopped
400g chicken breast or thigh, cubed
2-3 rashers bacon, diced
1tbsp oil
100ml chicken stock
300g frozen peas
6tbsp creme fraiche
handful of fresh parsely or basil, chopped
750g potatoes
Serves 4
1. Preheat the oven to 180°C. Fry the onion, bacon and chicken cubes in the oil for 5-10 mins until the onion is soft and chicken golden.
2. Pour over the stock, bring to the boil an simmer for 15-20 mins adding the peas for the last 5 mins.
3. Remove from the heat and stir in half the creme fraiche.
4. While the chicken mixture is cooking, boil the potatoes until soft. Then drain and mash with the rest of the creme fraiche.
5. Spoon the chicken into a dish (or 4 individual dishes) and top with the mash.
6. Bake in the oven for 20-30 mins until the topping is golden.
Alternatives:
You could swap the peas for sweetcorn or leeks. You make the topping from a mix of parsnip and potato mash. You could add cheese to the potato topping ... etc, etc
