Chorizo with Potatoes
Ingredients:
1 tablespoon oil
1 medium onion, peeled and finely chopped
400g chorizo sausage
3 cloves of garlic, peeled and finely chopped
1 bay leaf
100ml dry sherry
1kg small waxy potatoes
chopped fresh coriander
Serves 4
1. Preheat the oven to 200° C, Gas Mark 6. Put a kettle on to boil.
2. Put the oil in a wide, shallow, oven proof pan and put on the hob over a medium to low heat (if you don't have the right sort of pan ... do steps 2 - 6 in a large frying pan and then transfer to a shallow oven proof dish). Add the onion and cook for about 5mins until beginning to soften.
3. Add the garlic and cook for another couple of minutes,
4. Add the chorizo, bay leaf and sherry and stir.
5. Cut the potatoes in half and add to the pan. Stir, then pour over water from a just boiled kettle just to cover them (there should be the odd one poking out from the water).
6. Simmer for 10 minutes.
7. Put the dish, uncovered, in the oven and cook for 30-40 minutes.
8. Sprinkle with coriander and serve in bowls with crusty bread and a salad.
