Chicken Fajita Stuffed Sweet Potatoes
4 large sweet potatoes
2 tbsp olive oil
1 red onion, chopped
2 garlic cloves, chopped
2 chicken breasts, thinly sliced
2 portions fajita seasoning mix
3 mixed peppers, chunked
125g cheddar, grated
Serves 4
1. Heat the oven to 200°C, fan 180°C. Rub the sweet potatoes with a little oil and season with salt & pepper. Roast for 45mins or until soft.
2. While the sweet potato is cooking, heat the remaining oil in a pan and gently cook the onion for 5mins with the lid on.
3. Add the garlic and chicken and cook for approximately 10mins until the chicken is cooked through.
4. Add the fajita seasoning mix together with the chunked peppers and cook for a further 5mins or so until the peppers start to soften.
5. Let the sweet potatoes cool a little and then scoop out the flesh and mix with the chicken fajita mixture. Then pile this back into the sweet potato skins.
6. Top each potato with cheese.
7. Put the stuffed sweet potatoes back into the oven for a further 10mins.
8. You could serve this with guacamole and garnish with chopped, fresh coriander.
