One Pot Spiced Chicken Couscous
1 tbsp olive oil
1 onion, thickly sliced
200g chicken breast, diced
chunk of fresh root ginger
1-2 tbsp harissa paste, plus extra to serve if required
10 dried apricots, diced
220g can chickpeas, drained & rinsed
200g couscous
200ml hot chicken stock
175g fresh spinach
handful chopped fresh coriander
Serves 4
1. Heat the olive oil in a large frying pan and cook the onion for a few minutes until softened
2. Add the chicken and fry for 7-10 mins until cooked through and the onions have turned golden
3. Grate over the ginger, stir through the harissa to coat everything and cook for a further minute
4. Tip in the apricots, chickpeas,spinach & couscous, then pour over the hot stock and stir once
5. Take off the heat and cover tightly. Leave for about 5 mins until the couscous has soaked up the stock and is soft.
6. Fluff up with a fork and serve scattered with chopped fresh coriander and extra harissa if wanted
