Bolognese Sauce (for Spagetti Bolognese or Lasagne)
Ingredients:
250g lean minced beef (or veggie substitute)
75g mushrooms
2 rashers streaky bacon, finely chopped
1½ tablespoons olive oil
1 small onion, finely chopped
1 clove garlic, crushed
225g tin of chopped tomatoes
2 heaped tablespoons tomato puree
4 tablespoons red wine (about a glass)
1 teaspoon dried basil, or italian herbs
salt & pepper
Serves 4
1. Heat the oil in a saucepan and gently soften the onion, bacon, mushrooms and garlic for about 5 mins.
2. Add the mince, turn up the heat and keep cooking until the mince is all browned.
3. Pour in the tin of tomatoes (with it's juice), tomato puree, wine and herbs. Season with salt and pepper.
4. Put a lid on the pan and simmer gently for 30 mins.
5. Take the lid off and simmer gently for a further 20 - 25 mins to get a nice rich sauce. (If you miss out this step it can end up tasting a bit raw.
