Spiced Sweet Potato Soup
2 tsps Olive Oil
¼ tspcumin
¼ tsp coriander
¼ tsp turmeric
¼ tsp chilli flakes
¼ tsp cinnamon
¼ tsp paprika
1 onion, chopped
1 sweet potato, peeled and diced
400ml vegetable stock
Serves 2/3
1. In a saucepan, heat the oil over a medium heat and add the spices. Add the onion and sweet potato and cook for about 3 minutes.
2. Add the vegetable stock, bring to the boil.
3. Turn down the heat and simmer for 15-20 mins, until the sweet potato is soft.
4. Leave the soup to cool for a few minutes and then either liquidize, mash or serve chunky.
