Leek, Pea & Stilton Soutp
2 tbsps margarine
2 leeks, washed, trimmed & thinly sliced
250g potatoes, peeled and diced
1l veg stock
1 tsp dried herbs
250g frozen peas
200g stilton cheese, crumbled
Serves 6
1. Heat the margarine in a large saucepan and add the leeks. Cook, stirring frequently, over a low heat for 15 minutes.
2. Add potatoes, stock and herbs and bring to the boil. Lower the heat and simmer for 15-20 minutes until the potatoes are tender.
3. Add the peas and simmer for a further 5 mins.
4. Remove from the heat and add the stilton.
5. Blend or mash until fairly smooth.
6. This will keep in a fridge for up to a week.
