Couscous
100g couscous
160ml boiling water or stock
Optional, but essential for tasty couscous
A little olive oil or margarine/butter
Lemon juice
Mixed herbs
Serves 2
1. Put couscous into a bowl
2. Pour boiling stock/water over the couscous, cover and leave for 5 mins
3. Fluff couscous with a fork
4. Add taste! This could be a tbsp olive oil/margarine plus maybe some lemon juice and herbs.
5. This is just the base, you can then add all sorts of things, roasted vegetables; harissa or curry paste, dried fruit such as dates, apricots or sultanas; feta cheese, spring onions; chopped spinach (which will will down as you stir it in). Don't be afraid to mix and match and get inventive!
