Brandy Sauce for Christmas Pudding
1tbsp cornflour
25g
caster sugar
300ml milk
½ tsp vanilla essence
15g butter
Brandy to taste
1. Make a paste of the cornflour with a little milk
2. Gradually whisk in the rest of the milk, sugar and vanilla essence
3. Cook for 30 secs at a time in the microwave, whisking frequently until thickened and smooth
4. Once thick, whisk in the butter (or margarine) to make it glossy
5. Add in as much brandy as you feel appropriate. Maybe start with a tablespoon and then adjust to your personal taste.
