Chipotle Black Bean Soup
Juice of 1 lime
½ tsp olive oil
2 garlic cloves, finely chopped
1 red onion, chopped
½ tbsp ground cumin
½ tbsp smoked paprika
½ tbsp chipotle paste
400g can black beans, drained and rinsed
400ml veg stock
Sour cream, to serve
Coriander leaves, to serve
Serves 2
1. Heat the olive oil in a saucepan, add the garlic and onion and cook gently for about 8 mins till the onions are translucent and soft. Stir frequently, you don't want them to brown.
2. Add the spices and chipotle paste and cook for a further minute. Then add the beans, stock and lime juice.
3. Bring to the boil and then simmer for 15 mins.
4. Let cool for a minute and then liquidize or mash till fairly smooth (depending on your taste).
5. Serve topped with sour cream and some chopped coriander leaves.
