What am I going to cook tonight?

Chocolate Nut Shortbread

175g plain wholemeal flour
1 tsp baking powder
1/4 tsp salt
120g butter
50g brown sugar, plus extra for top
50g walnuts
50g dark chocolate
2-3 tbsp milk

 

 

 

1 Preheat oven to 180 degrees C

2 Mix plain wholemeal flour, brown sugar, baking powder and salt in a large mixing bowl

3. Cut the butter into cubes and add to the mix, before rubbing in with your fingertips until it looks like breadcrumbs

4. Chop the walnuts and dark chocolate into small chunks and add to the mixture

5. Stir in the milk, just enough to bind everything together into a soft dough

6. Roll out on a floured surface until about 1cm thick

7. Cut into shapes, or press the flattened mixture into a medium sized dish and bake as one piece

8. Cook in the middle of the over for approx 15 mins (if individual pieces) or 20-25 mins (if one large piece)

9. Shortbread needs to brown nicely on top and the centre need to be set firm

10 When ready, turn out onto a wire rack, sprinkle with the remaining brown sugar and then let it cool.

You could ring the changes by using brazil nuts and dried fruit for a change.
