What am I going to cook tonight?

Carrot Cake

225g self-raising flour
2 level teaspoons baking powder
150g light soft brown sugar
50g walnuts, chopped
100g carrots, washed and grated
2 ripe bananas, mashed
2 eggs
150ml salad or corn oil

1. Heat the oven to 180° C. Grease and line a 20cm round cake tin.

2. Sift together the flour and baking powder into a large bowl and stir in the sugar. Add the nuts, carrot and bananas and mix lightly.

3. Make a well in the centre, add the eggs and oil and beat well until blended.

4. Turn into the tin and bake in the oven for about 1¼ hours until the cake is golden brown and shrinking slighlty from the sides of the tin.

5. Cool on a wire racke.

Cream Cheese Icing

75g soft margarine
75g rich cream cheese
175g icing sugar, sieved
½ teaspoon vanilla essence

1. Put everything into a bowl and beat well till blended and smooth.

2. Spread over the cake and leave in a cool place to harden up a little bit.
