What am I going to cook tonight?

Beef Haggerty

450g lean minced beef
2 small onions
50g mushrooms
2 tsp marmite
1 tbsp gravy granules
1 tsp thyme
1 tbsp oil
12g margarine
450g potatoes
50g cheese, Lancashire or Cheddar

Serves 4

 

1. Chop one of the onions and the mushrooms, peel and thinly slice the potatoes and the other onion. Grate the cheese.

2. Dry fry the minced beef, onion and mushrooms until browned.

3. Add the marmite and thicken with the gravy granules.

4. Sprinkle in the thyme.

5. Heat the oil and margarine in a non-stick pan frying pan.

6. Place half the sliced potatoes and the sliced onions on the bottom of the pan. Add half the mince mixture. Top with half of the grated cheese. Then add the rest of the mince and top with the remaining sliced potatoes.

7. Cover with a lid, baking sheet or foil and cook on a moderate heat for 30 minutes or until the potatoes are soft.

8. Uncover, top with the remaining cheese and place the frying pan under a pre-heated grill until brown and golden (about 5 mins).
