What am I going to cook tonight?

Fluffy Quinoa

1 part uncooked quinoa (½ cup works well for 2 portions of salad)
2 parts water
Salt & pepper to taste

 

 

 

 

 

This method produces fluffy quinoa either for a warm side dish, or, cooled, the base for a salad dish.

1. Rinse the quinoa in a fine mesh colander for at least 30 secs to eliminate any bitterness.

2. Put the rinsed quinoa and water in a saucepan and bring to the boil over a medium- high heat without a lid. Turn down the heat to maintain a gentle simmer.

3. Simmer for 15-20 mins, or until all the liquid has been absorbed by the quinoa. Smailler amounts of quinoa will absorb the liquid more quickly.

4. Remove the pan from the heat and cover with a lid for 5 mins to let it steam and fluff up. Remove the lid to fluff up and then flavour.

Olive oil and fresh herbs make good flavour additions. Once cooled you could add beetroot, spring onions and feta, spiinach and roasted vegetables, sun dried tomatoes and dates for starters. Spice pastes such as harrisa work well too. Anything goes!
