What am I going to cook tonight?

Zesty Cranberry Sauce

340g fresh cranberries
1 cup sugar
Juice of 1 orange (about ½ cup)
Grated rind of 1 orange

Makes 3-4 cups cranberry sauce

 

1. Put all the ingredients into a large microwave proof bowl (not plastic, which might melt as the sugar boils!)

2. Cover with cling film, pierced in several places

3. Microwave on high for 4 mins

4. Stir, and microwave for a further 10 mins on defrost, until the cranberries have popped and softened, and the sauce has thickened

5. Stir and if you want the sauce smoother, either mash with a potato masher or liquidize

6. When a little cooler, put into jars and keep in the fridge
