What am I going to cook tonight?

Carrot Soup

450g Carrots
1 medium Potato
1 medium Onion
25g Margarine
2 tsps Mixed herbs
1.2l Vegetable stock
1 tsp Marmite
Salt & Pepper to taste

Serves 4 - 6

1. Chop the vegetables.

2. Melt the butter, add the onion and sweat gently for a few minutes until transparent.

3. Add the remaining ingredients and bring to the boil.

4. Reduce the heat and simmer, covered, for about 30 mins (until the vegetables are soft).

5. All to cool slightly, then blend with a hand blender. If you don't have a hand blender or liquidizer, you can just mash the vegetables until soft.

6. Reheat to serving temperature and season to taste.
